Low Fat Cooking

Low fat omelette.

Actually, this isn’t that low fat, but it’s tasty and good for you.

2 eggs, beaten.

Slice some red onion, mushrooms and green peppers diced – all small/thin.  Optional extras – ham or smoked sausage!

Heat the pan, get it hot, pour the eggs in and turn the heat down to medium.

Add the rest of the ingredients, make it like a pizza.  I like smoked sausage.  Sprinkle with salt and chilli powder.  OK, now for the bad bit (or non low-fat bit), add some grated cheddar.  For lower fat add mozarella.  You don’t need too much.

Fold the omelette in half…let it cook for a minute.  I then divide into 1/2 again so I can flip over and I just turn the pan heat off and let sit for 1 minute.  Voila, tasty and good for you!
